Fuji This big, super-sweet, crisp apple gains new fans each year with its hard texture and syrupy sweetness. Colours vary from yellow-green with red highlights to very red. Fuji is also excellent for baking (it holds its texture when baked) and for eating fresh-out-of-hand and in salads. Quick History - This immensely flavourful, new variety was introduced to the U.S. from Japan in the 1980s - but now the U.S. produces more Fujis than Japan. Availability - Washington's cool weather in the late fall helps develop its reddish-pink colour and superb flavour. Fujis are harvested in October and can be purchased October to August. |
